WThis is a simplified interpretation of a drink featured on the seasonal menu. Designed as a party-sized prepared mix that is loaded with essence of the Christmas time, rendering it perfect for a holiday party. Reserve the remaining citrus syrup to use in morning drinks, desserts, or to make more rounds of this cocktail.

Serves 10 people
Ingredients for the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place the listed components into a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the heat and leave to reach room temperature fully. Pour into a sealable bottle, cap it and store in the refrigerator, where it will keep for about four weeks.
Preparing the Batch Mix: Combine all the liquids into one large bottle, let it rest for 60 minutes, then strain , ideally through muslin, so it's fully clarified.
To serve: Measure 85ml from the batch mix into your stirring glass packed with ice, and stir gently for one minute to chill. Pour into a cold coupe glass or similar, garnish with a few cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
